My Meal Plan for the Week of February 17!

Here is what we had for dinner the week of February 17. This is week 2 of limiting our meat consumption. While we still eat eggs and cheese, I have not had meat since February 10. I still give the kids some meat but are meals are no longer centered around it.


Sunday: Spaghetti with Marinara Sauce and Spinach and Radicchio Salad (the red leaf lettuce at Whole Foods was too small to justify the cost, so I used the remaining spinach in the salad).


Monday: Whole Chicken with Potatoes, Roasted Broccoli, and Spinach and Radicchio Salad for the boys. I had everything but the chicken.


Tuesday: Black Bean Chili and Cornbread Muffins served with brown rice.
My Easy Chili Recipe

  • Sauteed Peppers
  • 1 can of Bush's Best Black Chili Beans
  • 1 28 oz. can of Crushed Tomatoes
  • Add Chili Seasoning to taste

Wednesday: Veggie Fried Rice


Thursday: Lasagna Roll-Ups or Tortellini


Friday: Left overs!


Saturday: Take Out
